  2. Insert 2 stalks lemon grass under the belly of fish. Steam the fish in high heat for 12 minutes. Discard the left over steaming water in the plate. Or you can transfer the fish to a nicer plate.
  3. Mix all the sauce ingredients. Let the sauce boil in a sauce pan. Pour the hot sauce on the fish.
  4. Garnish with chopped spring onions and coriander and serve.
