As the story goes, El Burrito founder Mark Roth made an effort to incorporate plant-based meats into his diet, but found most meat alternatives. I love to use Trader Joe's Soy Chorizo in this recipe, but other brands of soyrizo will also work just fine. Most soy chorizos are made from textured soy protein, vinegar, oil – usually canola oil, soy oil or both – and flavored with traditional chorizo seasonings If you're not a fan of soy products, wheat protein or TVP, recipe developer Stephanie Weaver suggests making a chorizo-like vegetarian substitute. So when I saw Soy Chorizo at my local Trader Joe's I had to try it.
