Instructions to make Bathua - Aloo Kachori:
  1. For preparation of Kachori dough - in a bowl add Ata, sooji, oil and salt and mix well
  2. Add water to make a soft dough and set aside covered with a muslin cloth for 15 mins
  3. For Kachori filling - wash Bathua leaves, and add to a blender, add 1/4 cup water to make a purée. Set aside
  4. In a wok heat 1 Tbsp oil, add chopped ginger, chopped green chillies and stir for 1 min. Add Bathua purée. Cook for 2-3 mins.
  5. Add mashed potatoes. Add red chilli powder, coriander powder, garam masala powder, salt and stir well. Cook until well cooked. Set aside, cool.
  6. Roll the dough to lemon size balls. Roll with a rolling pin, add little of the stuffing, fold all sides. Roll the Kachori.
  7. In a wok heat oil and deep fry in batches.
  8. Plate with Chutney and enjoy. I chose Tomato Chutney
