  2. Season pork chops with salt and pepper to taste
  3. Saute chops until cooked through, turning as required. Anywhere from 2-6 minutes a side depending on thickness
  4. Slice onion and mushrooms while chops cook
  5. Remove cooked chops and set aside. Cover with foil and let rest while you finish the sauce.
  6. Reduce pan to medium heat, Melt butter in pan, add onions, saute until tender, about 5 minutes
  7. Add mushrooms, continue cooking until tender, about 5 minutes
  8. Add tomato paste, flour, paprika, dried dill, and salt and pepper to taste
  9. Stir into mushroom/onion mix, tomato paste, flour, dill, paprika, about 15 seconds
  10. Add stock and deglaze pan
  11. Simmer until sauce thickens
  12. Remove from heat, stir in sour cream and fresh dill (if using)
