- Take 7-8 bitter gourd (karela)
- Make ready 1 cup chickpeas flour or besan

- Get 1 tbsp salt, 1 tsp sugar
- Get 1 onion cut
- Make ready Handful coriander leaves

Instructions to make Stuff karela/ Bittergourd:
- Take the bittergourd and scrape the outside cover. Remove the seeds from inside and give a lengthwise slit, but not in 2 parts
- Take the chickpeas flour add it to the powders, salt, sugar, onion coriander leaves a tbs of mustard oil and squeeze the juice of the lemon.
- Mix it thorough to a semi thick consistency.
- Stuff the bittergourd with the stuffing.
- Take a wok or kadai add to it 2 tbsp of mustard oil. Heat it and get it to the smoking point.
- To this oil add the stuffed bittergourds. Cover the wok for 8 to 9 minutes. Remove the cover and check whether the bitter gourd are getting shallow fried
- Then turn the bittergourd to the other side. Again cover them for 8 to 9 minutes.
- Then slowly remove the cover and toss the bittergourd sideways. If they are cooked properly they will not stick to the wok.
- After checking the desired result. Remove and serve them.
- They go very well with a meal of simple dal, rice.
