- Drain the sugar syrup and squeeze out the sugar syrup from the rossogolla too but gently. Keep aside.
- Prepare the milk- add the Kesar, Cardamom powder and cook the milk till it reduces by 50-60% on low flame…it will take about 20 minutes or so. Then add the sugar and cook again for 5-10 minutes.
- Put off the flame.Add the rossogolla and gently stir it so that the rossogolla are all submerged and coated with the milk. Leave it for about 2 hours for the milk to absorb by the rossogolla and come to room temperature. Your Rasmalai is ready. Serve it warm or chilled. Garnish with pistachio and rose petals or make Rasmalai cupcake as I did…I used the Rasmalai milk in the batter. Bon Appetit!!!
