- First boil milk and switch off the flame. Now add vinegar slowly to it. Milk starts curdling. Now strain it with the help of muslin cloth. Wash it with water so that taste of vinegar removes. Remove all water from it by pressing. Chena is ready for rasmalai.
- Now make small balls of chena and little press them to give shape of rasmalai. Keep it aside. In a heavy bottomed pan boil water and sugar for 7 - 8 min for sugar syrup. Now add rasmalai to sugar syrup and boil it for 10 min.
- In a pan take milk and keep it on low flame. Keep stirring. Reduce milk till it remains one fourth. Now add milkmaid and cardamom powder to it. Add some chopped nuts. Cool it and now rabdi is ready. Keep rasmalai in rabdi for sometime so that it becomes more spongy and delicious. Serve it with chopped nuts.
