- Make ready 1 cup Mixed Veggies of choice
- Prepare 1 Onion finely chopped

- Prepare 10-12 Black Peppercorns
- Make ready 2 nos Bay Leaves
- Get 1 tbsp Cumin Seeds
- Make ready 4-5 tbsp Oil
Instructions to make Chicken Zeera Fried Rice:
- In a pan, heat oil, then add the onions and minced ginger garlic and saute for a minute. Once it's done, add in all the veggies, green chillies, chicken, plus all the spices and stir fry for a while. Then cover with a lid and let it simmer on a low heat for 20-22 minutes. Veggies can be excluded totally.
- Meanwhile, in a cooking pot, add Oil. To this, add in the cumin seeds and bay leaves, you can also add other whole masalas such as cinnamon, black peppercorns
- For this you can either use freshly cooked Rice or leftovers. If making fresh Rice, do it accordingly. Add this Rice to the cooked Chicken and give it all a good mix but very gently. Garnish with Coriander and Mint Leaves chopped. Simmer for at least 15 more minutes. This piping hot awesome fusion can be served with any Indian side dish with gravy, Chicken Manchurian or any Chinese side dish as well.
