The ingredients needed to make Rasmalai:
  1. Get 2 liters milk
  2. Prepare 2 tablespoons vinegar/lemon juice
  3. Make ready 2 cups sugar
  4. Prepare 4 cups water
  5. Take Few drops Saffron/food colour
  6. Prepare As required Crushed almonds /pista
Instructions to make Rasmalai:
  1. Boil the milk in 2 containers 1-1 litre each and then turn off the flame.
  2. Add vinegar/lemon juice in 1 container to make the milk curdle.
  3. After sometime it starts cudling.
  4. Now strain the water from the chenna.
  5. Now run the tap water over the chenna and keep it in a muslin cloth tightly for 40 min.
  6. Now crumble the chenna and mash it with soft hands.
  7. Now make it smooth and creamy dough.
  8. Then make a small size smooth balls having no cracks.
  9. Similarly create more balls and press with your palm gently.
  10. Now boil the water and sugar and add these balls in the boiling water with covered lid.
  11. Cook it for 15 min in high medium flame.
  12. Add some sugar to the other boiling 1 litre milk and add saffron/food colouring and let it boil in medium low flame until it gets a little thick.
  13. Now squeeze the balls and add those balls into the milk with low medium flame.
  14. Now garnish it with almonds, pista and keep it in refrigerator until it gets cold.
