- Blend shallots, garlic, dried chilies, ginger, galangal, turmeric and lemongrass into a paste.
- Add oil to wok and heat up until hot. (Fry the cinnamon, cardamom and star anise here). Fry the paste until the oil separates. Add chicken and cook well (about 5 minutes both sides).
- Add the coconut milk, tamarind slices and salt and palm sugar. Cook until the liquid is reduced to a desired consistency or until dry.
