  4. Add cucumbers and onion to vinegar mixture. Stir to ensure all pieces are coated evenly. Cover and refrigerate at least 2 hours before serving. I like making mine a day ahead of time because the longer it sits the better it gets.

Wash the cucumbers in cold water. Larger ones may be halved or quartered and the seeds scooped out then cut into. When the onions and cucumbers are gone you can save the juice in the refrigerator and add more cucumbers and onions. For this recipe the cucumbers are salted down to remove excess water.
