Ghee rice/ kuska rice/kuska biriyani is one of the most favored of current trending foods in the world. It is appreciated by millions daily. It’s easy, it is quick, it tastes yummy. Kuska rice Or kuska biryani is quite known in south India and served in many hotels there. Its a good alternative to plain steamed rice and you can serve with any gravy like a korma or a masala gravy or even with dal. There are many variations of preparing this plain biryani. the word kuska is derived from the urdu word 'khushk' which means dry.

To begin with this particular recipe, we have to prepare a few ingredients. You can cook ghee rice/ kuska rice/kuska biriyani using 17 ingredients and 6 steps. Here is how you cook that.

The ingredients needed to make Ghee rice/ kuska rice/kuska biriyani:
  1. Take 2 cups Basmati rice
  2. Get 3-4 tsp ghee
  3. Prepare 1 bay leaf
  4. Take 4 green cardamoms
  5. Get 2 " cinnamon
  6. Get 1 tsp caraway seeds/ sah zeera
  7. Take 5-6 cloves
  8. Get 2 string mice
  9. Get 1 1/2 cup finely onion sliced
  10. Make ready 1 tsp ginger paste
  11. Take 1 tsp garlic paste
  12. Take 5-6 pudina/ mint leaves paste
  13. Prepare 5-6 pudina/ mint leaves crushed
  14. Get 3 slitted green chillies
  15. Prepare 2 tsp lemon juice
  16. Prepare 4 cups water
  17. Get To taste Salt

On lazy Sundays or no stock veggies day …if you can't afford Biriyani, Kuska comes to the rescue - it has all the flavour of actual Biryani. Though there are several ways by which this kuska rice can be made, I'm sharing one of the easiest methods. Instructions to make Ghee rice/ kuska rice/kuska biriyani:
  1. Wash rice with water 2 times and exceeding the water..keep aside atleast for 30 mins.
  2. Take a kadai or utensil for making rice which is good for dum. For cooking with dum technique we need a utensil which bottom is not thin, so sim/ slow cooking with lid do not stick to bottom.
  3. Put ghee and add bay leaf, caraway seeds, cloves, cinnamon, cardamoms, mice and wait untill spluttering.
  4. Add onions and cook low flame untill reach golden colour. Then add ginger and garlic paste, and cook untill raw smell of ginger and garlic goes away. Add pudina paste and pudina crushed and stir for 1 min.
  5. Add 4 cups water. When water starts boiling add rice, salt as per taste(check water for salt taste,if water is not salty then add more salt). Close the lid and seal the lid either with alluminium foil or cloths.
  6. Keep the flame to a low or sim and dum cook till the rice grains are tender and cooked. It will take about 7 to 8 minutes for the rice to cook. Do use a thick bottomed pan, so that the rice grains do not stick to the bottom of the pan. If you want you can check the rice grains once while cooking. If all the water has been absorbed and the rice grains do not look cooked, then add some hot water in the pan. Cover and continue to cook. Garnished with some mint leaves and served.
