The ingredients needed to make Coriander Rice:
  1. Prepare 1 cup Rice –
  2. Get 3 tsp Coconut oil or ghee
  3. Prepare 1/4 tsp Mustard –
  4. Make ready 1 Bay leaf
  5. Take 1 piece Cinnamon
  6. Take 1 tsp Chana dal
  7. Take 1 tsp Urad dal
  8. Take 2 Dry red chillies -
  9. Take To grind
  10. Take 4 cup Coriander leaves
  11. Prepare 1 Onion
  12. Make ready 1/2" piece 1 no Ginger
  13. Take 3 Green chillies

Coriander rice or kothamalli sadam is another recipe from Chandra Padmanabhan's Southern Spice. I have been trying more and more recipes from the book with good results and this kothamalli sadam. Instructions to make Coriander Rice:
  1. Wash and rinse rice well with running water and add 2 1/2 cup water and boil for 3 whistles or till rice cooks soft
  2. When rice boiled, spread them in a wide plate, add 1 tsp of ghee and plough with a fork.Let the rice comes to room temperature.
  3. Wash and clean coriander leaves, cut and discard the roots.You can grind the coriander leaves along with stem.
  4. Grind the grinding ingredients to fine paste without adding water.
  5. In a wide pan add ghee / oil and add mustard,when mustard starts spluttering add bay leaf,cinnamon,red chillies and saute in low flame till aroma comes, followed by chanadal, urad dal and saute till golden brown.
  6. Then add ground paste and boil till the masala thickens and colour changes to dark colour.Remove from flame.
  7. Finally add boiled rice,salt and mix gently till masala mix well with rice.
  8. Top with 1 tsp ghee / coconut oil and serve with your favorite sidedish or papad. Papad goes great with this rice.
