- Soak the urad dal and rice separately in water for 6 hours or overnight.
- Drain off the water and rinse both the urad dal and rice well. Add them to a grinder and grind to a thick batter. Transfer the batter to a wide bowl.
- Add all the ingredients (vegetables & spices) except oil to the batter. Mix everything well.
- Heat a nonstick frying pan or griddle and grease it with oil.
- Pour the whole batter mix on the centre and spread it just a little.
- Cover it with a lid and cook on a medium flame for 5-6 minutes till the bottom of the pancake turns golden brown.
- Flip it and add few drops of oil around the edges of the pancake. Cook for another 5-6 minutes till the other side gets golden brown or till just done.
- Remove the pancake to a plate and allow it to cool for few minutes.
- Gently cut the delicious pancake into equal pieces and serve with any kind of chutney of your choice.
