- Microwave the onion for 1 minute then add to the pan in which the chicken has just cooked. Cook for two minutes spraying with Spray2Cook if needed to stop it catching.
- Add the tomatoes, stock, paprika and cayenne pepper. Mix well and just bring to the boil. Pour the onion mixture over the chicken breast and put in the oven for 40 minutes.
- Add the peppers and return to the oven for 30 minutes. Stir through the cream with a spoon and garnish with a little paprika and chopped parsley
